Sesame seeds are tiny, flat oval seeds with a nutty taste and a delicate, almost invisible crunch. They come in a host of different colors, depending upon the variety, including white, yellow, black and red. Sesame seeds are highly valued for their high content of sesame oil, an oil that is very resistant to rancidity.
Sesame seeds are the main ingredients in both tahini and the Middle Eastern sweet treat, halvah. Sesame is commonly known as “Till”. Its botanical name is Sesamum indicum. It is one of the earliest domesticated plants. It is a short duration crop grown throughout the year. The seeds of the plant yield edible oil. Due to the presence of potent antioxidant, sesame seeds are known as “the seed of immortality”. Two distinct types of seed are recognized, the white and the black. There are also intermediate coloured varieties varying from red to rose or from brown or grey.
